Thanks to the sweetness of the corn, tang of the lime and kick from the jalapenos and chili powder, this quick and easy corn salsa is a fast favorite!
Ingredients
1 12 ounce bag of frozen corn, defrosted
½ red onion, diced
1 large jalapeno pepper, seeded and diced
½ bell pepper, diced
2 large limes, juiced
½ cup cilantro, roughly chopped
generous grinding of black pepper
dash of salt
1 tsp. chili powder
Instructions
Combine all ingredients in a medium mixing bowl, mix thoroughly.
Chill in the refrigerator for 2-3 hours to let the flavors combine.
Serve and enjoy!
