Al's Homemade Guacamole

My father-in-law's recipe for fantastic fresh & chunky, homemade guacamole. Perfect as a topping on burritos, sandwiches or salads, or as a dip for tortilla chips. Yum!
Ingredients
  • 7 ripe avocados, halved and pitted
  • 1 avocado pit (to keep the guacamole green)
  • 2 4 ounce cans of diced green chiles
  • 3 cloves garlic, minced
  • 10 tbsp red onion, diced
  • 3 limes, juiced
  • ½ teaspoon salt
  • Fresh ground black pepper, to taste
  • 3 roma tomatoes, diced, seeds removed
  • ½ cup cilantro, roughly chopped
Instructions
  1. Prepare your vegetables and cilantro.
  2. Squeeze the avocados into a large bowl, keep one pit for later.
  3. Smash the avocado with a fork until all large chunks are gone (small chunks are good though).
  4. Add lime juice, garlic, red onion, salt, pepper, and diced green chiles. Mix well.
  5. Fold in tomato and cilantro. Push the avocado pit into the guacamole, this well help keep it from turning brown.
  6. Cover and refrigerate for 2-3 hours.
  7. Give it a quick stir and serve with chips or as a topping on burritos/tacos. Enjoy!
