We keep talking about fall favorites, and this post is no exception. Seriously, it’s the best season! This recipe features the slow cooker (which we all know I’m crazy about) and the apple. I’ll admit it right now, I don’t have a fun fall story about prancing around the apple orchard and kicking leaves… I bought these bad boys at Aldi. But whatever, apples are still a great, versatile fall fruit, even if they’re not hand-picked, right? What I do have for you is an easy crock pot recipe for apple cinnamon oatmeal!
First of all, this oatmeal smells absolutely fantastic and filled my whole house with a yummy cinnamon smell. Imagine letting this simmer overnight and waking up to the smell of apples and cinnamon, with breakfast already made? That was my day yesterday except I made it in the afternoon so it was more like, “Imagine getting home from spin class with dinner already made.” Don’t worry, it was still awesome! Second of all, this crock pot oatmeal turned out so creamy. Like so, so, soooo creamy! Usually I microwave my oatmeal, which is a perfect breakfast in a pinch, but this oatmeal has a totally different texture. The recipe makes enough for six servings, and I don’t think it I’ll be sharing!
Ingredients:
3 cups of old fashioned oats
3 small apples, diced (I used lunchbox sized gala apples)
4 cups of almond milk (or any other type of milk or milk substitute)
2 cups of water
1 tablespoon cinnamon
1/2 teaspoon ground ginger
Dice your three small apples. I used the “lunchbox” sized gala apples, but golden delicious (or any other type of sweet apple) would work well too.
Throw everything into the slow cooker, give it a good stir, and cook for 7 hours on low or 3 hours on high. I used my six quart crock pot, but a 4 quart one would work too.
When it’s done, stir it and serve! Add whatever oatmeal toppings you like! I used chopped walnuts, but you can try brown sugar, banana, raisins… it would all be yummy!
I love how easy this is to make for breakfast — just set up everything before you head to bed and your overnight oatmeal will be ready in the morning!
