Okay, okay. I know this is the third hummus recipe I’ve posted (check out the quick and dirty and roasted red pepper and sweet potato varieties!). But seriously, I love hummus. I’ve switched it up the past couple weeks and have been making this white bean hummus on my food prep days. It’s a nice change from the chickpea varieties because it’s smoky and comes out so, so smooth. Plus, I love any excuse to use the Smoked Paprika I picked up at Trader Joe’s!
Ingredients:
2 cans of white beans (I used Great Northern, but Cannelini beans work too)
3-5 cloves garlic (depending on how much you like garlic, I usually use 5 and it’s very strong)
1 lemon, juiced
1 tsp cumin
1 tsp smoked paprika
Drain and rinse one can of white beans and add to the food processor. Add the other can as-is (juice included). Dump in the garlic, lemon juice, and spices and blend until smooth. That’s it! I like to sprinkle it with a little more smoked paprika before I serve it with sliced peppers, carrots, and celery. Yum!
