Today’s Mouthwatering Monday recipe is one I’ve borrowed from my grandmother. She saw it on a television show about forty years ago (she was unable to remember what show she saw it one), and over the years has managed to tweak it into the recipe I present you with today.
INGREDIENTS:
Dough:
2 cups of flour
1/2 cup of powdered sugar
2 sticks of margerine
Frosting:
1/2 cup sugar
8 oz of cream cheese
Glaze:
1 cup cranberry juice
4 tablespoons of sugar
4 teaspoons of corn starch
Also:
3-4 pints of strawberries
First, mix the ingredients for the dough in a large bowl by hand.
Once fully mixed, roll it out on a nonstick pizza pan.
Then, bake at 325 degrees for 20-25 minutes. When finished, it should be a golden brown. Let cool.
To make the frosting, mix 1/2 cup of sugar with 8 ounces of cream cheese. When the crust is cool, spread the frosting.
Next, prepare the strawberries. Wash and cut off the stems. A great way to remove the stems, if you have never seen this done before, is to use a straw, stick it through the bottom, and pop off the top. This wastes less at the top. Then cut them all in half but one (a large one to set in the middle. Place the strawberries on the pan.
After you’ve assembled the strawberries, it is time to make the glaze. In a saucepan, over low heat, mix 1 cup of craberry juice, 4 tablespoons of sugar, and 4 teaspoons of corn starch. The mixture will begin sort of clear, turn foggy, and then become very clear and vibrantly colored. That is when you know it is done. It will be thick like a syrup. Use a spoon to drizzle it over the strawberries. Refrigerate so this glaze stiffens a little before serving.
