I had a bunch of bananas that were turning brown, but I was in the middle of Christmas Cookie Fest 1.0, so I knew I had to use them for cookies! After Pinteresting and searching for banana cookie recipes, I came across a peanut butter banana cookie recipe from Gimme Some Oven. I’ve updated this recipe and doubled it, so it will make 50-60 fluffy peanut butter banana cookies.
Ingredients:
4 cups of all-purpose flour
2 teaspoons of baking powder
1/2 teaspoon of baking soda
1 teaspoon of salt
1/2 teaspoon of cinnamon
1/2 teaspoon of nutmeg
1/2 cup of butter
1 cup of brown sugar
3 medium ripe bananas
1 cup of peanut butter
2 eggs
2 teaspoons of vanilla
Preheat the oven to 350 degrees Fahrenheit.
In a mixing bowl, combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg. In the bowl of a stand mixer, cream the butter, sugar, and one banana on medium for 1-2 minutes. Add the last two bananas, peanut butter, eggs, and vanilla and mix for 1-2 minutes on medium. Slowly add the flour mixture while still mixing on medium.
Roll the dough into 1 inch balls. Depending on the size of the dough balls, you should end up with 50-60 cookies.
Use a fork to press down and make a criss-cross pattern on the top of each cookie. Sprinkle with colored sugar. Bake at 350 degrees for 8-10 minutes, or until a toothpick comes out clean.
Let cool before serving.
