As you know from the Spinach Artichoke Dip recipe I posted a few months ago, I’m a big fan of artichokes. As you also know from my Mississippi Caviar recipe, my aunt Lori is the master of appetizers. Today’s Mouthwatering Monday recipe is one of hers, and is for Baked Artichoke Dip. This recipe would be the perfect addition to your Super Bowl Sunday party in a few weeks.
What you need:
2 cans (14 ounces each) or artichoke hearts
8 green onions
1 cup of mayonnaise (you can use low fat if you’d like)
1 cup of grated parmesan cheese
1 teaspoon of garlic powder
Garlic or plain bagel chips
First, heat your oven to 350 degrees F.
Next, drain and chop your artichoke hearts, and chop your green onions (when cooking with green onions, I only ever cut to the point where light green turns into dark green on the onion tops).
In a large bowl, mix mayonnaise and cheese, then add onions, artichoke hearts, and garlic powder. Mix thoroughly, and scoop into a casserole dish with a lid.
Bake for 20 minutes with the lid on, or until hot. Serve with garlic or plain bagel chips.
